Easy Vegan Breakfast Burritos

These easy vegan breakfast burritos are flavorful and protein packed!  They are filled with vegetables, salsa, and plant-based sausage patties. Add sriracha or other hot sauce if you would like for a spicy kick! These are so easy to make and great as an on-the-go breakfast (or any time of day!).  Kid approved!

  • 1 tbls vegan Butter I used Earth Balance
  • 3/4 cup yellow onion, chopped
  • 1 cup Russet Potatoes, chopped into 1/4 inch squares
  • 1/2 cup bell peppers, chopped
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • 3 cloves garlic- minced
  • 1 cup salsa
  • 4 Morning Star Sausage Patties, original
  • 2 wheat tortillas (12 inch)
  • 2 tbls cilantro, chopped
  • sriracha optional, to add some heat


  1. Melt butter over medium heat, stir in the onions and cook for 2 minutes.

  2. Add potatoes, bell peppers, salt, pepper, and cook until potatoes are tender, stirring frequently, approx. 10 mins. Add the minced garlic and cook for another minute. 

  3. Stir in the salsa, turn heat to low and simmer for 3 mins. 

  4. Prepare the Morning Star Sausage Patties according to the package (I used a skillet). Let cool and then chop into 1/4 inch pieces. 

  5. Pile salsa mixture onto warmed tortilla, layer the sausage and cilantro on top, also the sriracha if using (adds a spicy kick!). Wrap up the burrito and enjoy.
