Vegan Grilled Cheese with Garlic Aioli

Grilled cheese sandwiches were always a favorite of mine, so I wanted to make a vegan version. The challenge was finding a plant-based cheese that not only tastes great but melts right too. I found the cheese I was looking for when I discovered Chao Slices. I tried the original and coconut herb flavor in this recipe and both are great. This vegan grilled cheese sandwich includes artichokes, tomatoes, Chao cheese slices, and a garlic aioli spread. Delicious, easy to make, and kid approved!

Vegan Grilled Cheese with Garlic Aioli

Ingredients

  • 1/2 tbsp vegan butter I used Earth Balance
  • 2 slices bread
  • 1 clove garlic clove, minced
  • 1 tbls Just Mayo (or your favorite vegan mayonnaise)
  • 4 slices Chao Vegan Cheese slices
  • 1/2 tomato, sliced
  • salt, to taste
  • fresh gound black pepper, to taste
  • 1/2 cup small artichoke hearts from jar or can, rinsed and pat dry, sliced in half

Instructions

  1. Preheat oven to 350F

  2. Melt the butter in a non stick griddle or skillet. Place the bread on top of the butter and toast on one side of each slice over medium low heat until it is a golden brown color. Remove from heat. 

  3. Mince and mash garlic clove with a small pinch of salt and stir it into the mayonnaise. Spread it onto the non toasted sides of the bread and then layer cheese slices two per side. 

  4. Place the sandwich halves on a baking sheet open-faced, and bake in preheated oven until cheese is melted approx. 3 minutes. 

  5. Place the sandwich halves on a plate and layer on the tomato slices. Sprinkle the tomato slices with salt and fresh ground black pepper, to taste. Then layer on the artichoke slices. Press halves together and enjoy!
