Sweet Potato Banana Chia Oat Cups (Vegan)

Do you like food you can easily take on the go? I know I do! These chewy and moist sweet potato, banana, chia, and oat cups are a healthy way to start the day, and perfect as a grab-and-go breakfast. An easy to make and kid approved vegan recipe! I like to make a couple batches to store for a few days in the refrigerator to grab out whenever I need a quick breakfast or snack.

Some health benefits of the following ingredients in the recipe:

  • Chia seeds– Omega-3, iron, fiber, calcium, potassium, protein, magnesium, manganese, phosphorous, zinc, antioxidants, and vitamins B3, B1, B2.
  • Oats– Soluble fiber, protein, antioxidants, iron, manganese, and vitamin B1.
  • Sweet Potato–Fiber, antioxidants
  • Banana– Potassium, soluble fiber, vitamin B6

Banana Sweet Potato Chia Oat Cups (Vegan)

Ingredients

  • 1 tbsp chia seeds
  • 1/3 cup water
  • 1 tbsp vegan butter or olive oil I used Earth Balance butter
  • 1 cup sweet potato, shredded
  • 1 cup old fashioned oats
  • 1/2 cup whole wheat pastry flour
  • 1/8 tsp salt
  • 1 tsp baking powder
  • 1 medium ripe banana
  • 1/3 cup maple syrup
  • 2 tbsp pure vanilla extract
  • 1/3 cup dried cranberries Optional

Instructions

  1. Preheat oven to 375F. Grease muffin cups or line with muffin liners.

  2. Stir the chia seeds into the water and set aside for 10 mins.

  3. Heat the butter (or oil) in a skillet and add shredded sweet potato. Cook on medium low heat stirring often until cooked through, approx. 3 mins.
  4. In a medium bowl combine the oats, pastry flour, salt, and baking powder.

  5. In a separate bowl, mash together the banana, maple syrup, chia seed mixture, and vanilla extract.

  6. Stir the dry ingredients into the wet ingredients and fold in sweet the potatoes (also dried cranberries if using). Fill muffin cups 1/2 full.

  7. Bake for 20 mins in a preheated oven, or until toothpick comes out clean. Enjoy.
