Walnut Cranberry Cookies (vegan, gluten free)

If you are looking for a vegan cookie recipe, look no further! these walnut cranberry cookies are easy to make and delicious.  I had a container of walnuts in my pantry and I wanted to see what I could create with those as the main ingredient. The result was a batch of these tasty and easy cookies. They are lightly sweet with bursts of cranberry and a hint of orange. I created this cookie recipe with the holidays in mind. They would make wonderful holiday treats and gifts. Vegan and gluten free!

  • 8 ounces vegan butter (1 stick) softened I used earth balance
  • 1/4 cup organic sugar
  • 1/2 tsp vanilla extract
  • 2 tsp orange zest
  • 1 1/4 cup Almond flour
  • 3/4 cup walnuts
  • 1/4 cup dried cranberries (craisins)
  • 1/4 cup vegan powered sugar optional


  1. In a medium bowl mix together the butter, sugar, vanilla extract, and orange zest until fully combined. Then stir in the flour. 

  2. In a food processor, pulse the walnuts a few times and then stir them into the dough mixture. Fold in the cranberries.

  3. Wrap the dough in plastic and place it in the refrigerator for 30 minutes. 

  4. Preheat oven to 325F and line a baking sheet with parchment paper. 

  5. Roll 2 teaspoons of dough into balls and place onto baking sheet spaced 1 inch apart.  Bake for 20 minutes. Allow to cool. Dust the cookies with powdered sugar or roll them in the powdered sugar until they are coated, if desired.
